What to know about Sumac:


Sumac, meaning "red" can be derived from many different species but it is the Rhus Coriaria species that is commonly used as a spice. The sumac tree produces berries which ripen to a pinkish red colour and turn deeper red when harvested. Sumac is a souring agent and more refreshing and fruity than other souring spices. It is said to be less sharp than vinegar and more pleasing than than tamarind. Sumac does contain tannins. Be careful of additions like salt or cottonseed oil which is sometimes added to increase the colour and texture of sumac.

It's not as easy to find sumac as it is finding other spices, so I really take note of this spice.  When I tore this bag open, the aroma was fantastic, so super fresh.  The taste was just the right amount of zing, not too tart.  I've bought sumac from various places, and this one was definitely the freshest and most pleasant. Brilliant in salad dressing.
