Moroccan Eggplant with Orange Carrot Salad
Gluten Free, Sugar Free


Serves 2

Ingredients:


2 Eggplants
1/3 cup Olive or Grapeseed Oil
2 Tsp Spice Sanctuary Moroccan Harmony Spice Blend
Few Sprigs of Thyme or Oregano, dried or fresh
Salt and Pepper to taste
1.5 cup Grated Organic Carrots
1/4 cup Raisins
1/4 cup Walnuts
1 Tbsp Hemp seeds
3 Tsp Orange Blossom Water
1 cup Greek Yogurt
1/2 Tsp Garlic, minced
1/2 Tsp Organic Paprika


How to Make:

1. Preheat the oven to 400F.
2. Cut the Eggplant into half and score the flesh diagonally one way and then another on each half.
3. Brush each half with olive oil. The oil will quickly absorb so use up all the oil and add a little bit more. Otherwise, the eggplant will be quite tough when cooked.
4. Place the Eggplant on a baking sheet and sprinkle 1/2 tsp of the Moroccan Harmony Spice Blend and thyme or oregano onto each half. Season with salt and pepper.
5. Transfer the eggplant to the oven and bake for about 30-40 minutes until the flesh is nice and soft.
6. In a bowl, mix together the yogurt, garlic and paprika and set aside.
7. In a another bowl, mix together all the ingredients for the salad and toss well.

How to Enjoy:

Place the cooked eggplant onto a dish, top with the garlic yogurt and finally with a generous serving of the orange carrot salad. This makes for a great summer starter or you can add some chickpeas to the salad for a healthy entree.
