Eggless Coconut Pistachio & Cardamom Cookies

Makes 10-14


75 g Organic Butter or Coconut Oil
1/4 cup Organic Coconut Sugar or Superfine Sugar
1/2 cup Milk of your choice
125 g Self Raising Flour
1 tsp Organic ground Coorg Cardamom
1/2 tsp Organic Vanilla Extract
1 tsp Baking powder
1.5 cups Fresh or unsweetened dessicated Coconut, grated
1/4 cup Ground Pistachios

How to Make:

1. Preheat the oven to 350F.
2. Whisk the butter/oil with the sugar in a bowl until well combined.
3. Gradually, add the milk and whisk together well.
4. Add the flour, cardamom, vanilla and baking powder and mix together really well before folding in the coconut and pistachios into a soft dough consistency.
4. Place a tablespoon of the mixture on a baking sheet and repeat, leaving space between cookies until all the mixture has been spooned.
5. Bake for about 20-25 minutes until golden brown.

Dip in cinnamon or ginger tea and mindfully savour these warming treats!
