Apple Pancake Puff

Serves 4


3 cups Apples, thinly sliced and unpeeled (or other fruit of your choice)

1.5 T. Butter

6 Eggs

1 cup Milk

2/3 cup All purpose or Gluten Free flour

1/2 t. Baking Powder

1/4 t. Salt

2 t. Spice Sanctuary True Cinnamon

1 T. Granulated Sugar

How to Make:

1. Preheat the oven to 425F. Lightly mist an 8 inch casserole dish with cooking oil spray.

2. Place the apples and butter in the baking dish. set in oven for 5-7 minutes as it heats up. Remove and toss with melted butter.

3. In a bowl, beat eggs well. Add milk and beat a bit more. Add flour, baking powder and salt and beat to combine well.

4. Pour the egg mixture over the warmed fruit in the baking dish. Sprinkle the cinnamon and sugar evenly on top.

5. Return the dish to the oven and bake for 20 minutes or until the pancake puffs up and is lightly browned.

How to Enjoy:

Enjoy right away! Like a souffle, the pull will fall shortly after coming out of the oven.
